Equipment

  • 1 rice cooker optional
  • 1 mini food processor or coffee grinder optional

Ingredients

  • 1 cup Farro
  • 2 cups Water
  • 1 tbsp Nutmeg Ground
  • 1 cup Walnuts
  • 3 tablespoon Maple syrup

Instructions

  • Wash the farro with cold water and let it presoak the day before cooking
  • Before cooking rinse the farro with cold water until the water is clear
  • Add the farro to the rice cooker together with the 2 cups of water and 1 tablespoon ground nutmeg.
You can cook it in a pot as well but I love to use the rice cooker for simplicity or set-it-and-forget-it kind of cooking
  • Let the farro cook till the rice cooker stops or if you are cooking it in a pot for about 20 min with the lid on.
  • Roughly grind the walnuts into a small food processor or coffee grinder.
  • Add the walnuts in the pot over the farro together with 3 tablespoon maple syrup and mix well
  • You can serve it immediately still warm or later cold from the fridge
  • Sometimes I like to add fresh or frozen raspberries for extra flavor

Notes

If you are cooking the farro in the pot keep the lid on all the time and try to cook it at medium temperature.
Cover the lid with a towel to absorb liquid that is trying to get out of the pot to avoid having it falling down on the stove and burn.
