Vegan green ayran with fresh wild garlic and mint (spring edition)

I love a cold refreshing ayran on a warm sunny day and since last week it almost felt like summer in Zürich I thought it was about time for the first ayran of the season. In summer I like to do it with mint and other herbs like basil, parsley, and a bit of garlic but since wild garlic is still in season I went for this vegan green ayran with fresh wild garlic and mint (I like to call it spring edition 😂) and it did not disappoint.

I love to use this vegan green ayran also as a salad dressing during summer. Such an easy way to add extra greens and flavors to your salads.

What is ayran

Ayran, also known as the non-alcoholic national drink of Turkey, is traditionally made of yogurt, water, and salt. It is very easy to make ayran on your own by mixing all the ingredients mentioned above, according to your taste and desired thickness. Of course, for the vegan version, you will have to use vegan yogurt and my personal choice is the soy yogurt for the extra protein boost. My favorite one currently is Alpro Natur without sugar because of the taste and creaminess. My personal touch to this Turkish classic is adding green herbs juice predominately mint but also basil, parsley and a bit of garlic. Since ayran is a summer drink, it is usually served chilled as an appetizer

List of ingredients for this refreshing vegan green ayran (spring edition)

  • 10 g fresh mint leaves
  • 20 g fresh wild garlic
  • 2 cup Vegan yogurt
  • 1 cup Cold water
  • ½ tsp Sal

Step by step instructions to prepare this deliciousness

  1. Start by preparing a green savory juice by adding to a blender the cup of water, fresh mint, wild garlic, and salt
  2. Blend everything until you obtain a green smooth texture juice
  3. Add one cup of yogurt in two separate glasses (one cup per glass)
  4. Pour half of the green juice into each glass with yogurt
  5. Mix with a spoon till well combine
  6. Add one or two cubes of ice to each glass of ayran for the extra chill and to keep it cool and refreshing
  7. Enjoy with a dear person 🙂 on a hot sunny day

That's it 😊 Easy, delicious refreshing.

Note

Enjoy this vegan green ayran as such (great refreshing drink on a hot sunny day) or you can pair it with a variety of Mediterranean or Middle Eastern flavors dishes. I like to pair it with falafel, hummus and pita bread, tabouleh Salad, grilled vegetables such as eggplant, zucchini, and bell peppers, or lentil soup (love how the coolness of the ayran contrasts with the warmth of a hearty lentil soup).  Delish!

Questions you might have

Can I use regular garlic instead of wild garlic?

While regular garlic will add a slightly different more intense flavor, it can be used as a substitute if wild garlic is not available. Just adjust the quantity to taste.

Is there a substitute for mint?

If you don't have mint, you can try using other fresh herbs like cilantro, basil or parsley for different flavor profile.

Can I make it ahead of time?

Yes, you can prepare this vegan green Ayran ahead of time and store it in the refrigerator for up to a day. Just give it a good stir before serving.

Can I customize the recipe?

Absolutely! Feel free to adjust the ingredients to suit your taste preferences. You can add more garlic for a stronger flavor or adjust the sweetness with a natural sweetener like agave or maple syrup.

Notes

I like to make the green juice first and only mix the juice with cold yogurt just before serving.
This way yogurt is not overheated in the blender and second I just love the visual process of combining the green juice with white yogurt. 😍
