Vegan green ayran with wild garlic and fresh mint (spring edition)

2cupVegan yogurtI like to use Alpro soy yogurt for the taste and extra protein
1cupCold water
½teaspoonSalt
Instructions
Start by preparing the green savory juice by adding to a blender the cup of water, fresh mint, wild garlic and salt
Blend everything until you obtain a green smooth texture juice
Add one cup of yogurt in two separate glasses
Pour half of the green juice into each glass with yogurt
Mix with a spoon till well combine
Add one or two cubes of ice to each glass of ayran for the extra chill and to keep it cool and refreshing
Enjoy with a dear person :) on a hot sunny day
Notes
I like to make the green juice first and only mix the juice with cold yogurt just before serving.This way yogurt is not overheated in the blender and second I just love the visual process of combining the green juice with white yogurt. 😍Enjoy this vegan green ayran as such (great refreshing drink on a hot sunny day) or you can pair it with a variety of Mediterranean or Middle Eastern flavors dishes. I like to pair it with falafel, hummus and pita bread, tabouleh Salad, grilled vegetables such as eggplant, zucchini, and bell peppers, or lentil soup (love how the coolness of the ayran contrasts with the warmth of a hearty lentil soup).
