Roast the nuts in the oven for 10 minutes turning them at half-time
Cool the nuts: let the roasted nuts cool for a few minutes otherwise the hot oil released can destroy your blender
Blend the nuts. Place the nuts into a powerful blender such Vitamix and blend for approximately one minute or two depending on the desired texture. I like a more creamy texture so I always go for two minutes.Depending on the equipment you are using this process can take a bit longer. Be patient and mix until you obtain the desired consistency scraping the walls with a spatula from time to time
Transfer the nut butter to an airtight container and store it in the refrigerator. It can be stored for weeks but I don't think it will last that long :)

You can make nut butter from various nuts such as peanuts, almonds, cashews, or hazelnuts. I always like to use a mix of various nuts for variety but also for the unique flavor resulting from combining different types of nuts. The beauty of making your own nut butter is that you can be very creative with the blends and ingredients you add to it. You can add cocoa powder, sea salt, maple syrup, hemp seeds, etc. Creativity has no limits. If I don't know what I want to use it for in the short term, I prefer to keep it simple without extras as this way will be easier to use it for either sweet but also salty dishes depending on the need.
