How to make nut butter

Once you learn how easy it is to make creamy nut butter at home you will never buy the store version again

I admit I learned it the hard way. I used to buy my nut butter almost all the time for convenience till one day when I decided I want to improve my finances and tracked all my spending for three months to see where my money were going and what were some of the most expensive groceries items I was paying for. Not a huge surprise nut butter was one of those items so I decided to cut down on this cost by making it myself.

At the beginning I was making it from one type of nut but then I started to become very creative and mix different types of nuts or add various flavors to it such as sea salt, cocoa, maple syrup etc.

With a powerful blender the whole process takes less than two minutes so I don't think I will go back to the store version any time soon 🙂

Advantages of making the nut butter yourself

  • Healthier option: making your nut butter at home allows you to select good quality nuts and control the ingredients ensuring your nut butter has no extra oil or other additives and preservatives
  • Customization: you can create your own blends and play with level of sweetness, salt or adding flavorings like cinnamon or cocoa or increase decrease the proportion of different nuts to play with texture and flavors
  • Save money: buying the nuts in bulk and avoiding extra cost associated with pre-packaged varieties makes the home made nut butter more cost effective adding up to significant savings in the long run
  • Reduced packaging waste: helping you contribute to a more eco friendly and sustainable lifestyle.

How to make it

  1. Preheat the oven to 175 °C (347 °F)
  2. Chose your nuts or nuts mix as desired
  3. Spread the nuts on a baking sheet
  4. Roast the nuts in the oven for 10 minutes turning them at half-time
  5. Cool the nuts: let the roasted nuts cool for a few minutes otherwise the hot oil released can destroy your blender
  6. Blend the nuts. Place the nuts into a powerful blender such Vitamix and blend for approximately one minute or two depending on the desired texture. I like a more creamy texture so I always go for two minutes
  7. Transfer the nut butter to an airtight container and store it in the refrigerator. It can be stored for weeks but I don't think it will last that long 🙂
  8. Enjoy!

Notes

  • Depending on the equipment you are using this process can take a bit longer (with a food processor this can take even 12 minutes). The nuts are transforming first into a meal, then clumps then chunky and finally smoot creamy nut butter
  • Be patient and mix until you obtain the desired consistency scraping the walls with a spatula from time to time
  • If you are vegan I highly recommend investing into a good powerful blender such as Vitamix. This will last you for decades and make your life so much easier
  • It can be served as such or added to a variety of dishes both sweet and savory.
  • I like to add it to smoothies, oatmeal, overnight oats, cookies, dip for fruits, on a toast with slices of bananas or raspberries or make nut butter sauces with it etc.

Can I use raw nuts?

You can use also raw nuts. Roasted nuts tend to have a richer flavor

Do I need to add any other ingredients besides nuts?

You can add a pinch of salt to enhance flavor. Some people choose to sweeten their nut butter with agave or maple syrup

How long it takes to make the nut butter?

The time can vary depending on the type of nuts and the power of the blender or food processor. With a food process this can take up to 12 minutes.

How can I store the butter?

Nut butter can be stored in a clean, airtight container or jar in the refrigerator for several weeks or even months

Notes

You can make nut butter from various nuts such as peanuts, almonds, cashews, or hazelnuts. 
I always like to use a mix of various nuts for variety but also for the unique flavor resulting from combining different types of nuts.  
The beauty of making your own nut butter is that you can be very creative with the blends and ingredients you add to it. You can add cocoa powder, sea salt, maple syrup, hemp seeds, etc. Creativity has no limits. 
 If I don't know what I want to use it for in the short term,  I prefer to keep it simple without extras as this way will be easier to use it for either sweet but also salty dishes depending on the need.
