Equipment

  • 1 Bamboo steamer or any other type of steamer

Ingredients
  

  • 2 Aubergines medium to large
  • 1 tablespoon Miso brown
  • 1 tablespoon Soy sauce
  • 1 Garlic clove grated
  • 5 g Fresh ginger grated
  • 1 teaspoon Maple syrup
  • 1 tablespoon Lemon juice
  • 1 teaspoon Sesame oil roasted sesame oil optional
  • 1 teaspoon Sriracha sauce
  • 1 tablespoon Water
  • 1 tablespoon Sesame seeds roasted

Instructions
 

Steaming the aubergines

  • Start by adding water to a pan and bring it to a boil
  • Wash the aubergines (eggplants) and cut them into medium size cubes
  • Steam them for about 20 minutes using a bamboo steamer or any other type of steamer you have
  • Remove the steamer from the pot and leave to cool a bit

Prepare the spicy miso sauce

  • In a small bowl combine the remaining ingredients: miso, soy sauce, garlic, ginger, maple syrup, lemon juice, sesame oil, Sriracha sauce, and water, and mix until well combined into a sauce
  • Pour the sauce on the aubergines still warm, mix till well combined
  • Sprinkle on top the sesame seeds and enjoy

Notes

You can eat it right away still warm but I recommend letting them infuse a bit before serving for a greater flavor experience.
You can serve it as such or accompanied by some basmati rice.
