This chewy, nutty, easy farro dessert it's so easy yet full of flavors. Are you ready to try one of the easiest desserts you have ever cooked?
Winter is around the corner in the northern hemisphere and with daylight becoming shorter and shorter I always feel I am running out of time and there are so many things I wish I would have time to do after a day of work. With daylight time becoming so precious I need quick and easy solutions when it comes to cooking and meal planning. The fewer ingredients the better and if I could just put them all in a pot and let them simmer without too much intervention from my end even better. I just feel I am becoming a lazier person around this time of the year and would do everything possible to avoid decision fatigue.
I have recently come across an article in Harvard Business Review saying that each day we make an average of 217 food-related decisions ๐คฏ. Is it any surprise we so often make poor choices about what we eat?
If you are like me and want to keep things as simple as possible then you are going to love this recipe.
A few things about farro
- Farro is a very nutritious grain. Itโs an excellent source of protein, fiber and nutrients like magnesium zinc and some B vitamins
- It contains more fiber than most popular grains
Now imagined all this goodness packed as a dessert, the ultimate dream.
List of ingredients for this chewy farro dessert
- 1 Cup farro
- 2 Cups water
- 1 tablespoon nutmeg
- 3 tablespoon maple syrup
Steps
- Wash the farro with cold water and let it presoak the day before cooking
- Before cooking rinse the farro with cold water until the water is clear
- Add the farro to a rice cooker together with the 2 cups of water and 1 tablespoon ground nutmeg.
- Let the farro cook till the rice cooker stops
- Roughly grind the walnuts into a small food processor or coffee grinder
- Add the walnuts in the pot over the farro together with 3 tablespoon maple syrup and mix well
- You can serve it immediately still warm or later cold from the fridge
Notes
- You can cook it in a pot as well but I love to use the rice cooker for simplicity or set-it-and-forget-it kind of cooking
- If you are cooking the farro in the pot keep the lid on all the time and try to cook it at medium temperature.
- Cover the lid with a towel to absorb liquid that is trying to get out of the pot to avoid having it falling down on the stove and burn
- Sometimes I like to add fresh or frozen raspberries for extra flavor and antioxidants
Some questions you might have
You can store it in the fridge into an airtight glass container
You can keep it up to one week in the fridge
I like to add fresh or frozen raspberries and extra maple syrup if I am in the mood for a sweeter dessert
