  • Spread 200g of walnuts evenly on a baking tray. Make sure they are in a single layer for even roasting.
  • Place the tray in the oven and roast for 10 minutes, turning and mixing the walnuts halfway through to ensure they roast evenly. Keep an eye on them to prevent burning. The walnuts should be golden brown and fragrant.
  • Cool the walnuts: Remove the tray from the oven and allow the walnuts to cool completely before using them in the recipe.

Mix the Ingredients

  • Add the prunes, dates, cinnamon, and salt to the food processor. Blend until the mixture becomes a smooth, creamy paste.
  • Next, add the roasted walnuts to the food processor and mix again until the mixture becomes a thick, sticky paste.

Form the Energy Bites

  • Scoop the paste into silicone molds, pressing it down firmly. These molds create perfectly sized snacks, ideal for lunch boxes and kids' snacks.
  • Place the molds in the freezer to set. Once firm, remove the bites from the molds and enjoy, or store them in the freezer for a convenient, grab-and-go snack.

Storage: 

Store the energy bites in an airtight container in the freezer. They can be enjoyed directly from the freezer or allowed to soften slightly at room temperature for a chewier texture.
