Indulge in a culinary fiesta with this Vegan Mexican Spicy Elote Salad. Imagine a symphony of spicy elote, vibrant cilantro, and the citrusy embrace of lime zest and juice. But here's where the magic happens- a dollop of Vegan Tofu Tartar Sauce, infusing a creamy twist that elevates the dish to a new level.
This Mexican street corn salad is my vegan version of the popular Mexican dish and a tasty way to bring a piece of the sunny Mexico into our house.
If youโre not familiar with them, elotes are Mexican grilled or boiled corn topped with mayo, chili powder, lime, and Cotija cheese. It can be served straight from the cob or in a cup (kernels cut off the cob and mixed with the rest of the ingredients into a delicious mix). So tasty!!
This Mexican corn salad is fresh, bright, citrusy, lightly creamy, and most importantly spicy.
It's easy to make and sure to please everyone. Perfect for an easy side dish, light lunch, or snack!
This recipe works great also with canned corn so you don't have to wait for the summer to enjoy its flavors fiesta.
Top it off with a chili powder sprinkle for a flavor fiesta that will leave you craving more!

Notes
My favorite thing about this recipe is that it uses a tofu high-protein vegan tartar sauce instead of classic mayo making it not only super delicious but also a healthier and nutrient-packed dish.
Love serving this as such with a spoon or with tortilla chips.
Take this with you are your next picnic or Mexican-themed party with friends and you will thank me later.
