This Mexican street corn salad is my vegan version of the popular Mexican dish and a tasty way to bring a piece of the sunny Mexico into our house.

If you’re not familiar with them, elotes are Mexican grilled or boiled corn topped with mayo, chili powder, lime, and Cotija cheese. It can be served straight from the cob or in a cup (kernels cut off the cob and mixed with the rest of the ingredients into a delicious mix). So tasty!!

This Mexican corn salad is fresh, bright, citrusy, lightly creamy, and most importantly spicy.

It's easy to make and sure to please everyone. Perfect for an easy side dish, light lunch, or snack!

This recipe works great also with canned corn so you don't have to wait for the summer to enjoy its flavors fiesta.

Top it off with a chili powder sprinkle for a flavor fiesta that will leave you craving more!

Mexican Street Corn Salad Recipe Ingredients

  • 2 cups Cooked corn kernels (grilled, boiled, or even from a can). I used the canned corn outside season
  • ½ cup Tofu vegan tartar sauce (you have to try this if you haven't already, trust me you will become addicted)
  • ¼ cup Red onion (one small red onion)
  • ½ tsp Cumin Ground
  • ½ tsp Chili powder
  • ¼ tsp Smoked paprika
  • 1 Tbsp Chopped Green onions (optional)
  • ½ tsp Freshly Ground Pepper
  • ½ tsp Salt
  • 2 tsp Lime juice
  • ½ tsp Lime zest zest from a half lime
  • ⅛ cup Fresh cilantro finely chopped

Step-by-step instructions for this easy corn salad recipe

  1. If using fresh corn, cook it on a grill or boil it in a pan, then slice off the kernels with a knife. Drain the corn kernels from the can if you use canned corn and add it to a large bowl
  2. One by one add the Vegan Tofu Tartar sauce and the rest of the ingredients and spices
  3. Mix all ingredients till well combine
  4. Add to a serving plate and sprinkle some more chili powder on top for an extra spicy kick and a nice color
  5. Enjoy

Notes

My favorite thing about this recipe is that it uses a tofu high-protein vegan tartar sauce instead of classic mayo making it not only super delicious but also a healthier and nutrient-packed dish. 

Love serving this as such with a spoon or with tortilla chips.

Notes

Great serving it with some tortilla chips and take to vegan summer parties. 
Try adding a lower quantity of chili powder if you are spice-averse.
Living with a Mexican in the house I have developed over time resistance to spicy foods but often I realize not everyone can handle our level of spiciness so adjust yours to your taste.
