This soft and tender steamed aubergines with spicy miso sauce recipe is so simple yet full of flavors and aromas opening the next level in the game of aubergines cooking
Steaming is a great way to cook aubergines, and probably one that not a lot of people would think of doing (I for sure haven't consider it for a lot of time).
To me, the idea of steaming the aubergines was making me think of diets and lack of flavors but this recipe is here to prove this couldn't be further from the truth. I have recently enjoyed a similar dish in a lovely restaurant in Madeira and I was hooked, so I had to create my version of it and share it on the blog so here it is.

List of ingredients for this steamed aubergines recipe
- 2 Aubergines medium to large
- 1 tbsp Miso brown
- 1 tablespoon Soy sauce
- 1 Garlic clove grated
- 5 g Fresh ginger grated
- 1 tsp Maple syrup
- 1 tbsp Lemon juice
- 1 tsp Sesame oil roasted sesame oil optional
- 1 tsp Sriracha sauce
- 1 tbsp Water
- 1 tbsp Sesame seeds roasted
Step by step instructions to prepare the steamed aubergines
- Start by adding water to a pan and bring it to a boil
- Wash the aubergines (eggplants) and cut them into medium size cubes
- Steam them for about 20 minutes or until soft and tender using a bamboo steamer or any other type of steamer you have
- Remove the steamer from the pot and leave to cool a bit
- For the spicy miso sauce add the remaining ingredients in a small bowl: miso, garlic, ginger, maple syrup, lemon juice, sesame oil, Sriracha sauce, and water, and mix until well combined into a sauce
- Pour the sauce on the aubergines still warm, mix till well combined
- Sprinkle on top the sesame seeds and enjoy
Note
You can eat the steamed aubergines with spicy miso sauce right away still warm but I recommend letting all ingredients infuse a bit before serving for a greater flavor experience
