Smoothies are my go to meal in busy mornings when I want to make sure I get all the good nutrients my body needs. Such an easy way to sneak in lots of fruits and veggies but also beans and healthy fats.
This creamy, golden pumpkin smoothie is on repeat in our house during fall. You have to try it to understand why. Just look at this yummy color. It is like sunshine in a jar.

What you need to make this deliciousness
- 2 cups soy milk
- ¼ cup oats rolled oats
- 1 thumb ginger keep the skin if bio
- 1 cup pumpkin puree. I use home made pumpkin puree. It always tastes better.
- 1 tbsp almond butter
- 1 tbsp maple syrup
- ½ tsp allspice ground
- ½ tsp cinnamon ground
- 1 piece orange peeled
How to make this creamy pumpkin smoothie
- Into a powerful blender add the 2 cups of soy milk, thumb of ginger and oats and blend for one minute
- Add the rest of the ingredients and blend for another one minute or till the smoothie has the desired level of creaminess
Tips for making this recipe
- Start by blending the oats and ginger first to make sure you get that creamy texture before adding rest of the ingredients
- Depending on the power of your blender you might need to blend it more than one minute
- Serve it with ice cubes. From the blending smoothies tend to warm up a bit. This smoothy taste the best when cold
- Add some roasting pumpkin seeds for a bit of crunch

- 2 cups soy milk
- ¼ cup oats rolled oats
- 1 thumb ginger keep the skin if bio
- 1 cup pumpkin puree Hokkaido pumpkin
- 1 tablespoon almond butter
- 1 tablespoon maple syrup
- ½ teaspoon allspice ground
- ½ teaspoon cinnamon ground
- 1 piece orange peeled
Finishing
- 2 tablespoon pumpkin seeds roasted
- 6 cubes ice
Instructions
Smoothie preparation
- Into a powerful blender add the 2 cups of soy milk, thumb of ginger and oats and blend for one minute2 cups soy milk, 1 thumb ginger, ¼ cup oats

Pumpkin seeds roasting
- Roast two tablespoons of pumpkin seeds in a pan till these are slightly golden and crunchy2 tablespoon pumpkin seeds
- Remove from the stove and let them cool
Serving
- Pour the smoothie into a mason jar or big glass, add two or three cubes of ice6 cubes ice
- Sprinkle on top the roasted pumpkin seeds for extra crunch and flavor2 tablespoon pumpkin seeds
